Ingredients
- 2 cups rolled oats
- 1/2 cup honey
- 1/2 cup creamy peanut butter
- 1/2 cup chopped almonds
- 1/2 cup dried cranberries
- 1/4 cup dark chocolate chips
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine rolled oats, chopped almonds, dried cranberries, chocolate chips, shredded coconut, and salt.
- In a small saucepan over low heat, warm honey and peanut butter, stirring until smooth. Remove from heat and stir in vanilla extract.
- Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
- Transfer the mixture to the prepared pan and press firmly into an even layer using a spatula or your hands.
- Bake for 18-20 minutes, until golden brown around the edges. Let cool completely in the pan before cutting into 12 bars.
