Ingredients
- 3 cups rolled oats
- 1 cup mixed nuts (almonds, pecans, walnuts), roughly chopped
- 1/2 cup pumpkin seeds
- 1/2 cup unsweetened shredded coconut
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup dried cranberries
- 1/2 cup raisins
Instructions
- Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- In a large bowl, combine oats, nuts, pumpkin seeds, and coconut.
- In a small bowl, whisk together honey, melted coconut oil, vanilla, and salt.
- Pour wet mixture over dry ingredients and stir until evenly coated.
- Spread mixture in an even layer on the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Let cool completely on the baking sheet (it will crisp as it cools).
- Once cool, stir in dried cranberries and raisins.
- Store in an airtight container at room temperature for up to 2 weeks.

- For extra crunch, add 1/2 cup dark chocolate chips after cooling.
