Ingredients
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup shredded Gouda cheese
- 1/2 cup finely diced ham
- 1/2 cup all-purpose flour (for coating)
- 2 large eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and cream. Cook, stirring constantly, until mixture thickens and comes to a boil, about 3-5 minutes.
- Remove from heat. Stir in salt, pepper, nutmeg, Gouda, and ham until cheese is melted and mixture is smooth.
- Spread mixture onto a plate and refrigerate until firm, at least 2 hours or overnight.
- Shape chilled mixture into 16 small logs (about 2 inches long).
- Set up breading station: place flour, beaten eggs, and breadcrumbs in separate shallow bowls.
- Coat each croquette in flour, then egg, then breadcrumbs. Place on a baking sheet and refrigerate for 30 minutes.
- Heat 2 inches of oil in a deep pot to 350°F (175°C). Fry croquettes in batches until golden brown, about 2-3 minutes. Drain on paper towels.
- Serve warm with mustard or aioli.
