Ingredients
2 tablespoons unsalted butter
1 medium onion, chopped
2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and chopped
2 tablespoons all-purpose flour
3 cups chicken or vegetable broth
1 cup whole milk
8 ounces Gouda cheese, shredded (about 2 cups)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
Chopped fresh chives or parsley for garnish (optional)
Instructions
In a large pot or Dutch oven, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
Add apples and cook for 3-4 minutes, stirring occasionally.
Sprinkle flour over the mixture and stir constantly for 1 minute.
Gradually whisk in broth and milk. Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring occasionally.
Remove from heat. Use an immersion blender to puree the soup until smooth. (Alternatively, carefully transfer to a blender in batches and puree, then return to pot.)
Return pot to low heat. Add shredded Gouda cheese, salt, pepper, and nutmeg. Stir until cheese is completely melted and soup is heated through. Do not boil.
Taste and adjust seasoning if needed. Serve hot, garnished with chives or parsley if desired.

For a smoother soup, peel the apples before chopping.
Use a young Gouda for a milder flavor or aged Gouda for a sharper taste.
