A homemade version of the classic ice cream treat: a vanilla ice cream bar enrobed in a crisp chocolate shell with a fudge center.

Ingredients
1 pint (2 cups) vanilla ice cream, softened
1/2 cup prepared chocolate fudge sauce, cooled
1 1/2 cups semisweet chocolate chips
3 tablespoons coconut oil
8 wooden popsicle sticks
Instructions
Line a 9x5-inch loaf pan with plastic wrap, leaving overhang. Spread softened ice cream evenly in pan. Freeze until firm, about 2 hours.
Using plastic wrap, lift ice cream block out of pan. Cut crosswise into 8 equal bars. Insert a popsicle stick into the cut end of each bar. Place bars on a parchment-lined baking sheet and freeze until very firm, at least 1 hour.
Spoon about 1 teaspoon of fudge sauce onto the center of each bar, spreading slightly. Return to freezer for 30 minutes.
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second bursts, stirring, until melted and smooth. Let cool to room temperature (about 80°F).
Line the baking sheet with fresh parchment. Working quickly, dip each frozen bar into the melted chocolate, allowing excess to drip off. Place on prepared sheet. Freeze until chocolate sets, about 10 minutes. Serve immediately or store in freezer for up to 2 weeks.
Tips
For a thicker chocolate shell, dip bars twice, letting the first layer set before the second dip.
Store bars in an airtight container with parchment between layers to prevent sticking.
If the chocolate coating thickens while dipping, reheat gently in the microwave.
