Ingredients
1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/2 cup unsalted butter, cold and cubed
2 cups sharp cheddar cheese, shredded
3 tablespoons cold water, or as needed
Instructions
In a food processor, combine flour, salt, garlic powder, and paprika. Add cold butter cubes and pulse until mixture resembles coarse meal.
Add shredded cheddar cheese and pulse until combined. Add cold water, 1 tablespoon at a time, and pulse until dough comes together.
Turn dough onto a lightly floured surface and knead briefly. Divide dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Roll out one disc of dough on a floured surface to 1/8-inch thickness. Use a small fish-shaped cutter (or any small shape) to cut out crackers. Transfer to prepared baking sheets.
Bake for 12-15 minutes, until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Repeat with remaining dough.
Store in an airtight container at room temperature for up to a week.

For extra flavor, add a pinch of cayenne pepper or onion powder.
