Ingredients

- 2 cups whole milk
- 1 cup chicken or vegetable broth
- 2 cups shredded sharp cheddar cheese
- 1 cup goldfish crackers, plus more for garnish
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add onion and cook until softened, about 3 minutes.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and broth. Bring to a simmer and cook, stirring occasionally, until slightly thickened, about 5 minutes.
- Reduce heat to low. Add shredded cheddar cheese and stir until melted and smooth.
- Stir in 1 cup of goldfish crackers and paprika. Cook for 2 minutes, until crackers soften and blend into the soup.
