Ingredients
1 (8-10 lb) bone-in fully cooked ham or pork shoulder
1 cup brown sugar, packed
1/2 cup honey
1/4 cup Dijon mustard
1/4 cup apple cider vinegar
1 teaspoon ground cloves
1/2 teaspoon ground cinnamon
Whole cloves for studding (optional)
Instructions
Preheat oven to 325°F (165°C).
Score the ham's surface in a diamond pattern about 1/4 inch deep. If desired, stud each diamond with a whole clove.
Place ham on a rack in a roasting pan. Add 1/2 cup water to the bottom of the pan.
In a small bowl, whisk together brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and cinnamon until smooth.
Brush half of the glaze over the ham.
Roast for 1 hour, then brush with remaining glaze. Continue roasting until internal temperature reaches 140°F (60°C), about 1 more hour, basting every 20 minutes.
Remove from oven and let rest 15 minutes before slicing.
Tips
For a pork shoulder, adjust cooking time to reach an internal temperature of 190°F (88°C) for shredding.
Leftover ham can be stored in the refrigerator for up to 5 days or frozen for 2 months.
