Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 cup molasses
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, then stir in molasses.
In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Gradually add to the butter mixture, alternating with hot water, mixing until just combined.
Pour batter into prepared pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool in pan on a wire rack for 10 minutes, then turn out onto rack to cool completely. Serve warm or at room temperature.
Tips
Store in an airtight container at room temperature for up to 5 days.
Can be served with whipped cream or lemon glaze.
