Ingredients
1 (3 oz) package strawberry gelatin
1 (3 oz) package lime gelatin
2 cups boiling water, divided
1 cup cold water, divided
1 cup milk
1/4 cup sugar
2 egg yolks
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
Instructions
Dissolve strawberry gelatin in 1 cup boiling water; stir in 1/2 cup cold water. Pour into an 8-inch square dish; refrigerate until firm, about 2 hours.
Dissolve lime gelatin in remaining 1 cup boiling water; stir in remaining 1/2 cup cold water. Pour into another 8-inch square dish; refrigerate until firm, about 2 hours.
Meanwhile, in a small saucepan, whisk milk, sugar, and egg yolks. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon, about 5 minutes. Do not boil. Remove from heat; stir in vanilla. Cool to room temperature.
In a chilled bowl, beat heavy cream and powdered sugar until stiff peaks form. Fold half of the whipped cream into the cooled custard.
Cut gelatin into 1/2-inch cubes. In 4 parfait glasses, layer strawberry gelatin cubes, custard mixture, lime gelatin cubes, and remaining whipped cream. Repeat layers if desired.
Refrigerate for at least 30 minutes before serving.
