Ingredients
1 cup cold water
1 packet (about 2 1/4 tsp) unflavored gelatin
1/2 cup sugar
1 1/2 cups fruit juice (e.g., orange, grape, or cranberry)
1 tablespoon lemon juice (optional)
Instructions
In a small bowl, sprinkle gelatin over 1/2 cup cold water. Let stand for 5 minutes to soften.
In a small saucepan, combine remaining 1/2 cup water and sugar. Heat over medium heat, stirring, until sugar dissolves and mixture is hot but not boiling.
Remove from heat. Add softened gelatin and stir until completely dissolved.
Stir in fruit juice and lemon juice (if using).
Pour mixture into a 4-cup mold or individual serving dishes. Refrigerate until set, at least 4 hours or overnight.
To unmold, dip mold in warm water for a few seconds, then invert onto a plate.
Tips
For a firmer gelatin, use 1 1/2 packets of gelatin.
Add fresh fruit pieces to the mixture before chilling for added texture.
