Ingredients
3 cups cooked jasmine rice, preferably day-old
4 tablespoons vegetable oil
6 cloves garlic, minced
2 large eggs, lightly beaten
1/2 cup frozen peas and carrots, thawed
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon white pepper
2 green onions, sliced
Instructions
Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until golden and crispy, about 30 seconds. Remove garlic with a slotted spoon and set aside.
Add remaining 2 tablespoons oil to the pan. Pour in beaten eggs and scramble until just set, about 30 seconds.
Add rice, breaking up any clumps. Stir-fry for 2-3 minutes until rice is heated through.
Add peas and carrots, soy sauce, sesame oil, and white pepper. Stir-fry for another 2 minutes.
Fold in half of the crispy garlic and green onions. Serve garnished with remaining garlic.
Tips
Use cold, day-old rice for best texture; fresh rice can become mushy.
For extra flavor, add a dash of oyster sauce or chili oil.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
