- 1 medium zucchini, halved lengthwise and sliced
- 1 red bell pepper, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon red pepper flakes
- Salt to taste
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, torn
Instructions
- Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water, then drain.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add zucchini, bell pepper, and red pepper flakes. Cook, stirring occasionally, until vegetables are tender, about 5 minutes.
- Add cherry tomatoes and cook until they begin to soften, about 2 minutes.
- Add drained pasta to the skillet along with 1/2 cup reserved pasta water. Toss to combine, adding more pasta water if needed to loosen the sauce.
- Remove from heat. Stir in Parmesan cheese and basil. Season with salt to taste. Serve immediately.
