Ingredients
1 1/2 cups whole milk
1/2 cup heavy cream
1/3 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Instructions
In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
Gradually whisk in milk and heavy cream until smooth.
Place saucepan over medium heat and cook, stirring constantly, until mixture thickens and comes to a gentle boil, about 5 minutes.
Remove from heat and stir in vanilla extract.
Let mixture cool slightly, then pour into popsicle molds.
Insert sticks and freeze until solid, at least 4 hours or overnight.
To unmold, run warm water over the outside of the molds for a few seconds.
Tips
For extra creaminess, use whole milk and heavy cream; lower-fat substitutes may result in icier texture.
