Ingredients
1 cup fruit juice (e.g., apple, grape, or orange)
1/2 cup fruit puree (e.g., strawberry, mango, or raspberry)
3 tablespoons honey or maple syrup
3 tablespoons unflavored gelatin powder
1 tablespoon lemon juice
Instructions
In a small bowl, combine the fruit juice and gelatin powder. Let it sit for 5 minutes to bloom.
In a small saucepan, combine the fruit puree, honey or maple syrup, and lemon juice. Heat over medium-low heat, stirring occasionally, until warm (do not boil).
Add the bloomed gelatin mixture to the saucepan and stir continuously until the gelatin is fully dissolved and the mixture is smooth, about 3-4 minutes.
Remove from heat and let cool for 2 minutes.
Pour the mixture into silicone molds or a greased 8x8 inch baking dish.
Refrigerate for at least 2 hours, or until firm.
If using a baking dish, cut into desired shapes with a knife or cookie cutters.
Store in an airtight container in the refrigerator for up to 2 weeks.
Tips
Use 100% fruit juice and puree for the best flavor and natural sweetness.
For a firmer texture, add an extra 1/2 tablespoon of gelatin.
