Ingredients
1 cup Greek yogurt
1/2 cup granola
1 cup mixed fresh berries (strawberries, blueberries, raspberries)
1 tablespoon honey or maple syrup
1/2 teaspoon vanilla extract
Instructions
In a small bowl, mix the Greek yogurt with honey and vanilla extract until well combined.
Wash and slice the strawberries if using; leave smaller berries whole.
In serving glasses or bowls, layer 1/4 of the yogurt mixture, then 1/4 of the granola, and 1/4 of the berries. Repeat layers until all ingredients are used, ending with berries on top.
Serve immediately or refrigerate for up to 2 hours before serving.
Tips
Use any seasonal fruits like peaches, mangoes, or bananas.
For a dairy-free version, use coconut yogurt.
Parfaits can be assembled ahead and stored in the fridge; add granola just before serving to keep it crunchy.
