Ingredients
1 package (3 oz) strawberry gelatin
1 cup boiling water
1 cup cold water
1 cup fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 cup whipped topping (e.g., Cool Whip), thawed
1/2 cup vanilla yogurt
Instructions
In a medium bowl, dissolve strawberry gelatin in boiling water. Stir until completely dissolved, about 2 minutes.
Add cold water and stir. Refrigerate until slightly thickened but not set, about 30 minutes.
In a small bowl, mix whipped topping and vanilla yogurt until well combined.
Divide half of the slightly thickened gelatin among 4 parfait glasses. Layer with half of the strawberries, blueberries, and raspberries.
Add a layer of the yogurt mixture on top of the fruit.
Repeat layers with remaining gelatin and fruit.
Refrigerate until fully set, at least 2 hours or overnight.
Before serving, top with a dollop of remaining yogurt mixture and a few fresh berries if desired.
Tips
For a sugar-free version, use sugar-free gelatin and yogurt.
You can substitute any combination of fresh fruits like peaches, kiwi, or mango.
Parfaits can be made a day ahead and stored covered in the refrigerator.
