Ingredients
1 (6 oz) package strawberry-flavored gelatin
2 cups boiling water
1 cup cold water
1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh pineapple, diced
1 banana, sliced
1 cup whipped cream or whipped topping (optional)
Instructions
In a large bowl, dissolve the strawberry gelatin in 2 cups of boiling water, stirring until completely dissolved.
Stir in 1 cup of cold water.
Refrigerate the gelatin mixture for about 1 hour, or until it is slightly thickened (consistency of raw egg whites).
Gently fold in the strawberries, blueberries, pineapple, and banana.
Pour the mixture into a 6-cup mold or individual serving dishes.
Refrigerate for at least 4 hours, or until firm.
To serve, unmold if using a mold, or serve directly in dishes. Top with whipped cream if desired.
Tips
