Ingredients
2 cups mixed fresh or frozen berries (such as strawberries, blueberries, raspberries)
2 cups chopped fresh or frozen stone fruits (such as peaches, plums, nectarines)
1/4 cup granulated sugar
2 tablespoons lemon juice
1 teaspoon vanilla extract
1/4 cup water
Instructions
Combine all ingredients in a medium saucepan over medium heat.
Bring to a simmer, stirring occasionally to dissolve the sugar.
Reduce heat to low and cook for 15-20 minutes, stirring occasionally, until the fruits have softened and the liquid has thickened slightly.
Remove from heat and let cool slightly. Serve warm or refrigerate until cold.
For a smoother compote, mash some of the fruits with a fork before serving.
