Ingredients
- 1 cup plain Greek yogurt
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 1/2 cup granola
- 1/2 cup diced mango or banana
Instructions
- In a small bowl, stir together the yogurt, honey, and vanilla extract until well combined.
- Wash and prepare the fruits: hull and slice strawberries, leave blueberries and raspberries whole, and dice mango or banana into small pieces.
- To assemble, spoon half of the yogurt mixture into the bottom of two serving glasses or bowls.
- Add a layer of mixed berries, then a layer of granola, followed by a layer of diced mango or banana.
- Repeat the layers with remaining yogurt, fruits, and granola, finishing with a sprinkle of granola on top.
- Serve immediately or refrigerate for up to 2 hours for a chilled parfait.
