Ingredients
- 2 cups plain Greek yogurt
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 1/2 cup granola
- 2 tablespoons chopped fresh mint (optional)
Instructions
- In a medium bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth.
- Line a loaf pan with plastic wrap, leaving overhang. Spread half of the yogurt mixture evenly in the pan.
- Scatter half of the berries over the yogurt, then top with the remaining yogurt mixture. Smooth the top.
- Cover with plastic wrap and freeze for at least 4 hours, or until firm.
- To serve, lift the frozen yogurt out of the pan using the plastic wrap. Slice into 4 equal pieces.
- Place each slice in a serving dish. Top with remaining berries, granola, and mint if desired.
