Instructions
In a medium bowl, combine cookie crumbs and melted butter. Press firmly into the bottom and up the sides of a 9-inch pie dish. Freeze for 10 minutes.
In a large bowl, whisk together sweetened condensed milk, lime juice, vanilla, and peppermint extract until smooth. Add a few drops of green food coloring if desired.
In a separate bowl, beat heavy cream with an electric mixer until stiff peaks form. Gently fold the whipped cream into the condensed milk mixture until well combined.
Pour the filling into the prepared crust. Smooth the top with a spatula.
Freeze for at least 6 hours or overnight until firm.
Before serving, let the pie sit at room temperature for 5-10 minutes to soften slightly. Garnish with crushed peppermint candies or chocolate shavings.
Tips
For a cleaner slice, dip a knife in hot water before cutting.
Store leftover pie in the freezer, covered, for up to 1 week.
