  4. Line a colander with a double layer of cheesecloth or a clean kitchen towel. Place the colander over a bowl. Gently pour the curdled mixture into the lined colander.
  5. Let it drain at room temperature for 1-2 hours for a soft, spreadable cheese, or longer (up to 4 hours) for a firmer texture. For a creamier result, stir occasionally during draining.
  6. Transfer the fromage blanc to a container, cover, and refrigerate. It will keep for up to 1 week.
