Ingredients
1/2 pound ground pork
1/4 pound shrimp, peeled and finely chopped
2 green onions, finely chopped
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon grated fresh ginger
1/2 teaspoon salt
1/4 teaspoon white pepper
1 package (about 50) square wonton wrappers
1 egg, beaten (for sealing)
Vegetable oil, for frying
Instructions
In a bowl, combine ground pork, chopped shrimp, green onions, soy sauce, sesame oil, ginger, salt, and white pepper. Mix well.
Place a wonton wrapper on a clean surface with a corner facing you. Place about 1 teaspoon of filling in the center.
Brush the edges of the wrapper with beaten egg. Fold the bottom corner up to the top corner to form a triangle, pressing to seal.
Bring the two side corners together, overlapping them slightly, and press to seal. Repeat with remaining wrappers and filling.
Heat about 2 inches of vegetable oil in a deep pot or wok to 350°F (175°C).
Fry wontons in batches, without crowding, for 2-3 minutes until golden brown and crispy. Drain on paper towels.
Serve hot with sweet chili sauce or soy-vinegar dipping sauce.
Tips
Make sure to seal wontons tightly to prevent filling from leaking during frying.
You can freeze uncooked wontons on a baking sheet, then transfer to a freezer bag for up to 3 months. Fry from frozen, adding 1-2 minutes to cooking time.
For a vegetarian version, substitute pork and shrimp with finely chopped mushrooms and tofu.
