A quick and easy fried rice loaded with ham, vegetables, and eggs, perfect for using up leftover rice.

Ingredients
3 cups cooked white rice, preferably day-old
2 tablespoons vegetable oil
1 cup diced ham
1/2 cup frozen peas and carrots, thawed
2 green onions, sliced
2 large eggs, beaten
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon white pepper
Instructions
Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add ham and stir-fry for 1 minute. Remove ham and set aside.
Add remaining 1 tablespoon oil to the wok. Pour in beaten eggs and scramble until just set. Remove and set aside with ham.
Add rice to the wok, breaking up clumps. Stir-fry for 2-3 minutes until heated through.
Add peas and carrots, green onions, ham, and eggs back to the wok. Drizzle soy sauce and sesame oil over the rice. Sprinkle white pepper. Toss everything together until well combined and heated through.
Serve immediately.
Tips
For best results, use cold leftover rice; freshly cooked rice can become mushy.
Feel free to add other vegetables like diced bell peppers or corn.
Adjust soy sauce to taste; you can also add a splash of oyster sauce for extra flavor.
