Ingredients
4 (6-ounce) white fish fillets (such as cod or tilapia)
1 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup panko breadcrumbs
Vegetable oil, for frying
4 hamburger buns, split and toasted
1/2 cup tartar sauce
4 leaves lettuce
4 slices tomato
Instructions
Pat fish fillets dry with paper towels. Season lightly with salt and pepper.
In a shallow dish, combine flour, paprika, garlic powder, salt, and pepper. In another dish, beat eggs. In a third dish, place panko.
Dredge each fillet in flour mixture, shaking off excess. Dip into beaten eggs, then coat with panko, pressing gently to adhere.
In a large skillet, heat about 1/2 inch oil over medium-high heat until shimmering (350°F). Fry fillets in batches, 3-4 minutes per side, until golden brown and cooked through. Drain on paper towels.
Spread tartar sauce on cut sides of toasted buns. Place lettuce, tomato, and fried fish on bottom buns. Close with top buns and serve immediately.
Tips
For extra crunch, use seasoned panko or add 1 tablespoon cornmeal to the breadcrumbs.
Serve with lemon wedges and extra tartar sauce on the side.
Leftover fried fish can be reheated in a 350°F oven for 5-7 minutes.
