Ingredients
2 slices bread (white, whole wheat, or sourdough)
1 tablespoon unsalted butter, softened
1 large egg
1 slice cheddar or American cheese
Salt and freshly ground black pepper to taste
Optional toppings: ketchup, hot sauce, sliced tomato, avocado, or cooked bacon
Instructions
Spread the softened butter evenly on one side of each bread slice.
Heat a non-stick skillet over medium heat. Place both bread slices butter-side down in the skillet. Cook until golden brown, about 2 minutes. Remove and set aside.
In the same skillet, crack the egg. Cook until the white is set but the yolk is still runny, about 3 minutes. Season with salt and pepper. If you prefer a firmer yolk, cook an additional minute.
Place the cheese slice on one toasted bread slice (buttered side up). Carefully transfer the fried egg onto the cheese.
Add any desired toppings, then top with the other bread slice (buttered side up). Serve immediately.
Tips
For extra flavor, fry the egg in bacon fat instead of butter.
To make it a sandwich meal, serve with a side of fresh fruit or hash browns.
