Ingredients
4 bone-in, skin-on chicken thighs
4 chicken drumsticks
2 cups buttermilk
2 cups all-purpose flour
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper

Instructions
In a large bowl, combine buttermilk with 1 teaspoon salt and 1/2 teaspoon black pepper. Add chicken pieces, cover, and refrigerate for at least 2 hours or overnight.
In a shallow dish, whisk together flour, paprika, garlic powder, onion powder, cayenne, remaining 1 teaspoon salt, and remaining 1/2 teaspoon black pepper.
Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the flour mixture, pressing firmly to adhere. Place on a wire rack and let rest for 10 minutes.
Heat 2 inches of oil in a deep skillet or Dutch oven to 350°F (175°C).
Fry chicken in batches, without crowding, for 12-15 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C). Drain on paper towels.
