Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs total), halved horizontally and pounded to 1/2-inch thickness
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil, for frying
Instructions
Season both sides of chicken cutlets with salt and pepper.
Set up a breading station: Place flour in a shallow dish. Beat eggs in a second dish. In a third dish, combine panko, garlic powder, and paprika.
Dredge each cutlet in flour, shaking off excess. Dip in egg, letting excess drip off. Coat evenly with panko mixture, pressing gently to adhere.
Heat 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F).
Fry cutlets in batches, without crowding, for 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F).
