Ingredients
2 cups fresh pineapple, finely diced
1/2 cup red bell pepper, finely diced
1/4 cup red onion, finely diced
1 jalapeño, seeded and minced
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice
1/4 teaspoon salt
Instructions
In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro.
Add the lime juice and salt, and stir gently to combine.
Taste and adjust seasoning with more salt or lime juice if desired.
Let the salsa sit at room temperature for 10 minutes to allow flavors to meld before serving.
Tips
For a milder salsa, remove the seeds and membranes from the jalapeño. For more heat, leave some seeds in.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
