- 6 medium apples (about 2 lbs), any variety, washed
- 1 lemon, juiced (optional, to prevent browning)
- 1-2 tablespoons sugar or honey (optional, to taste)

Instructions
- Core the apples and cut into chunks. No need to peel.
- Place apple chunks in a blender or food processor. Add lemon juice if using.
- Blend until smooth, about 1-2 minutes. If too thick, add a little water (1-2 tablespoons).
- Place a fine-mesh strainer or cheesecloth over a large bowl or pitcher. Pour the apple pulp into the strainer.
- Press with a spatula or squeeze the cheesecloth to extract as much juice as possible. Discard the pulp.
- Taste the juice and stir in sugar or honey if desired. Serve over ice immediately.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days. Shake before serving.
