Ingredients
- 3 large leeks (white and pale green parts only), sliced
- 2 tablespoons unsalted butter
- 3 cups chicken or vegetable broth
- 2 medium russet potatoes, peeled and diced
- 1 cup heavy cream
- Salt to taste
- White pepper to taste
- 1/4 cup finely chopped fresh chives for garnish
Instructions
- In a large pot, melt butter over medium heat. Add leeks and cook, stirring occasionally, until softened but not browned, about 8 minutes.
- Add broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are very tender, about 20 minutes.
- Remove from heat and let cool slightly. Puree the soup in a blender until completely smooth (work in batches if needed).
- Stir in heavy cream. Season with salt and white pepper to taste.
- Chill the soup in the refrigerator for at least 4 hours, or overnight, until very cold.
- Ladle into bowls and garnish with chopped chives before serving.
