Ingredients
- 3 large leeks, white and light green parts only, sliced
- 2 tablespoons unsalted butter
- 1 medium onion, chopped
- 2 medium potatoes, peeled and diced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup whole milk
- Salt and white pepper to taste
- 1/4 cup fresh chives, chopped (for garnish)
Instructions
- In a large pot, melt butter over medium heat. Add leeks and onion; cook until softened, about 8 minutes, without browning.
- Add potatoes and broth; bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, about 20 minutes.
- Remove from heat and let cool slightly. Puree the soup in a blender until smooth (work in batches).
- Stir in cream and milk. Season with salt and white pepper. Chill thoroughly, at least 4 hours or overnight.
- Ladle into bowls and garnish with chives. Serve cold.
