Ingredients
12 pitted prunes
3 large eggs
1/2 cup granulated sugar
1 cup whole milk
1/2 cup all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
1 tablespoon unsalted butter, for greasing
1 tablespoon confectioners' sugar, for dusting
Instructions
Preheat oven to 375°F (190°C). Butter a 9-inch pie dish or shallow baking dish.
Arrange the prunes evenly in the bottom of the prepared dish.
In a medium bowl, whisk together eggs and granulated sugar until light and frothy.
Add milk, flour, vanilla extract, and salt; whisk until smooth and well combined. The batter will be thin.
Pour the batter over the prunes in the dish.
Bake for 35-40 minutes, until the clafoutis is puffed, golden brown, and set in the center (a knife inserted near the center should come out clean).
Let cool for at least 10 minutes. Dust with confectioners' sugar before serving. Serve warm or at room temperature.
Tips
For a twist, substitute prunes with cherries or plums.
Clafoutis is best served the same day, but leftovers can be refrigerated and reheated gently.
