1 onion, diced
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
2 medium potatoes, peeled and diced

4 frankfurters, sliced into rounds
1/4 cup chopped fresh parsley
Instructions
Melt butter in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
Pour in chicken broth and add potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
Add sliced frankfurters and cook for 5 minutes more.
