  2. In a non-stick skillet over medium heat, melt 1 tbsp butter. Add onion and cook until softened, about 2 minutes. Add frankfurter slices and cook until lightly browned, about 2 minutes. Transfer to a plate.
  3. In the same skillet, melt remaining 1 tbsp butter over medium-low heat. Pour in half the egg mixture, tilting to cover the pan. Cook until edges are set but center is still slightly runny, about 2 minutes.
  4. Sprinkle half the cheese over one half of the omelette, then top with half the frankfurter-onion mixture. Fold the other half over the filling. Cook 30 seconds, then slide onto a plate. Repeat with remaining ingredients for second omelette.
  5. Serve immediately.
