Ingredients
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon active dry yeast
1 cup warm water (110°F)
2 tablespoons olive oil, plus more for brushing
8 ounces stracchino or crescenza cheese, sliced
1 tablespoon fresh rosemary, chopped (optional)
Coarse sea salt for sprinkling
Instructions
In a small bowl, dissolve yeast in warm water and let stand for 5 minutes until foamy.
In a large bowl, combine flour and salt. Add yeast mixture and olive oil, mix until a shaggy dough forms.
Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for 1 hour until doubled.
Preheat oven to 450°F (230°C). Punch down dough and divide into 2 equal pieces.
On a floured surface, roll each piece into a 10-inch circle or oval, about 1/4-inch thick.
Place half the cheese slices on one half of each dough circle, leaving a 1/2-inch border. Fold the other half over the cheese and press edges to seal.
Transfer each filled focaccia to a parchment-lined baking sheet. Brush tops with olive oil, sprinkle with rosemary and coarse salt.
Bake for 20-25 minutes until golden brown and cheese is melted. Let cool slightly before cutting into wedges.
Tips
Serve warm as an appetizer or snack.
For extra flavor, add a few cracks of black pepper before baking.
Leftover focaccia can be reheated in a 350°F oven for 5 minutes.
