Ingredients
- 1 cup water
- 1 cup granulated sugar
- 1 (2-inch) piece fresh ginger, peeled and thinly sliced
- 1/2 cup fresh mint leaves, packed
Instructions
- In a small saucepan, combine water and sugar. Bring to a boil over medium heat, stirring until sugar dissolves.
- Add ginger slices and mint leaves. Reduce heat to low and simmer for 5 minutes.
- Remove from heat and let steep for 10 minutes.
- Strain syrup through a fine-mesh sieve into a bowl or jar, pressing on solids to extract liquid. Discard solids.
- Let cool completely before using. Store in an airtight container in the refrigerator for up to 2 weeks.
