Ingredients
1 cup fresh lemon juice (about 4-6 lemons)
1/2 cup granulated sugar
4 cups cold water
1/2 cup fresh mint leaves, plus extra for garnish
1-inch piece fresh ginger, peeled and sliced

Instructions
In a small saucepan, combine sugar and 1 cup of water. Heat over medium heat, stirring until sugar dissolves. Remove from heat and add mint leaves and ginger slices. Let steep for 10 minutes.
Strain the syrup into a pitcher, discarding mint and ginger. Let cool to room temperature.
Add lemon juice and remaining 3 cups of cold water to the pitcher. Stir well.
Fill glasses with ice cubes and pour lemonade over ice. Garnish with fresh mint leaves and serve immediately.
Tips
For a sweeter lemonade, increase sugar to 3/4 cup.
Store leftover lemonade in the refrigerator for up to 3 days; stir before serving.
To make sparkling lemonade, replace 1 cup of water with sparkling water.
