Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup warm water
2 tablespoons olive oil, divided
1/2 cup grated mozzarella cheese
1/4 cup crumbled feta cheese
1/2 cup cherry tomatoes, halved
1/2 cup bell pepper, diced
1/4 cup red onion, thinly sliced
1/4 cup sliced black olives
1 teaspoon dried oregano

Instructions
In a large bowl, mix flour, baking powder, and salt. Add warm water and 1 tablespoon olive oil; stir until a dough forms. Knead on a floured surface for 2 minutes, then let rest for 10 minutes.
Preheat oven to 425°F (220°C). Divide dough into 4 equal pieces. Roll each piece into a thin oval or round about 1/4 inch thick.
Place flatbreads on a baking sheet lined with parchment paper. Brush with remaining olive oil.
Sprinkle mozzarella and feta evenly over each flatbread, leaving a small border.
Top with cherry tomatoes, bell pepper, red onion, and olives. Sprinkle with oregano, salt, and pepper.
Bake for 12-15 minutes until edges are golden and cheese is melted. Serve warm.
Tips
For extra crispiness, preheat the baking sheet in the oven before placing the flatbreads on it.
You can substitute any vegetables you have on hand, such as zucchini or mushrooms.
