A classic British flapjack is a chewy, buttery oat bar sweetened with golden syrup and brown sugar, perfect for a snack or lunchbox treat.

Ingredients
- 125g unsalted butter, plus extra for greasing
- 125g light brown sugar
- 3 tablespoons golden syrup
- 250g rolled oats
Instructions
- Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line a 20cm square baking tin with baking parchment.
- In a large saucepan, melt the butter, brown sugar, and golden syrup together over low heat, stirring occasionally until smooth.
- Remove from the heat and stir in the rolled oats until fully coated.
- Tip the mixture into the prepared tin and press down firmly and evenly with the back of a spoon.
- Bake for 20-25 minutes until golden brown at the edges but still slightly soft in the center.
- Leave to cool in the tin for 10 minutes, then mark into 12 bars while still warm. Allow to cool completely before removing from the tin.
Tips
- For a crunchier flapjack, bake for a few extra minutes, but watch carefully to avoid burning.
- Store in an airtight container for up to a week.
- Add 100g of dried fruit, chocolate chips, or chopped nuts along with the oats for variation.
