Ingredients
1.5 lbs firm white fish fillets (e.g., cod, halibut, or sea bass), cut into 1.5-inch chunks
3 tablespoons lemon juice
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 red onion, cut into chunks
1 lemon, cut into wedges (for serving)
4 wooden skewers, soaked in water for 30 minutes
Instructions
In a bowl, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper. Add fish chunks and toss to coat. Cover and refrigerate for 15-20 minutes.
Preheat grill to medium-high heat (about 400°F).
Thread fish chunks onto skewers, alternating with red onion chunks.
Grill skewers for 3-4 minutes per side, until fish is opaque and flakes easily with a fork.
Serve immediately with lemon wedges.
Tips
For best results, don't marinate fish longer than 30 minutes or the acid will start to cook it.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
