Ingredients
4 (6-ounce) cod fillets
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 cup buttermilk
1 large egg
1 cup panko breadcrumbs
Vegetable oil for frying
4 brioche buns, split and toasted
4 leaves lettuce
4 slices tomato
1/2 cup tartar sauce
Instructions
Pat fish fillets dry with paper towels. Season with salt and pepper.
Set up a breading station: in a shallow dish, mix flour, 1 teaspoon salt, 1/2 teaspoon pepper, and paprika. In another dish, whisk buttermilk and egg. In a third dish, place panko.
Dredge each fillet in flour mixture, shaking off excess. Dip into buttermilk mixture, then coat with panko, pressing gently to adhere.
Heat 1/2 inch oil in a large skillet over medium-high heat to 350°F (175°C). Fry fillets in batches until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
Spread tartar sauce on bottom halves of toasted buns. Top with lettuce, tomato, and fried fish. Close sandwiches and serve immediately.
Tips
For extra crunch, use a combination of panko and crushed cornflakes.
Serve with lemon wedges and extra tartar sauce on the side.
Substitute cod with haddock or pollock if desired.
