- 4 (6 oz) white fish fillets (such as cod or haddock)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Vegetable oil for frying
- 4 hamburger buns, split and toasted
- 4 leaves lettuce
- 4 slices tomato
- 1/2 cup tartar sauce
Instructions
- Pat fish fillets dry with paper towels. Season both sides with salt, pepper, and paprika.
- Set up a breading station: place flour in a shallow dish, beaten eggs in another, and panko in a third.
- Dredge each fillet in flour, shaking off excess. Dip into egg, then coat with panko, pressing gently to adhere.
- Heat about 1/2 inch of oil in a large skillet over medium-high heat until shimmering (350°F/175°C).
- Fry fillets in batches, 3-4 minutes per side, until golden brown and cooked through. Drain on paper towels.
- Toast buns lightly. Spread tartar sauce on bottom halves.
