Ingredients
8 frozen fish fingers (or homemade, see tips)
4 slices white bread (or wholemeal)
2 tbsp tartar sauce (store-bought or homemade)
2 leaves lettuce (e.g., butterhead or iceberg)
1 tbsp butter, softened (optional, for toasting)
Salt and pepper to taste
Instructions
Preheat oven to 200°C (400°F). Arrange fish fingers on a baking tray lined with parchment paper. Bake for 10-12 minutes, turning halfway, until golden and crispy.
While fish fingers cook, lightly toast the bread slices if desired. Spread tartar sauce on two slices of bread.
Place a lettuce leaf on each sauced slice. Arrange 4 hot fish fingers on top of the lettuce. Season with a pinch of salt and pepper.
Top with the remaining bread slices. Press gently and cut diagonally. Serve immediately with extra tartar sauce on the side.

For homemade fish fingers: cut white fish fillets into strips, dip in seasoned flour, egg, and breadcrumbs, then fry or bake until golden.
