Ingredients
4 (6-ounce) white fish fillets (such as cod or haddock)
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
2 large eggs
1 cup panko breadcrumbs
4 tablespoons vegetable oil, for frying
4 hamburger buns, split and toasted
1/2 cup tartar sauce
4 leaves lettuce
4 slices tomato
Instructions
Pat fish fillets dry with paper towels. Season both sides with salt, pepper, paprika, and cayenne if using.
Set up a breading station: place flour in a shallow dish. Beat eggs in another shallow dish. Place panko in a third dish.
Dredge each fillet in flour, shaking off excess. Dip into egg, letting excess drip off, then coat with panko, pressing gently to adhere.
Heat oil in a large skillet over medium-high heat. Fry fillets for 3-4 minutes per side, until golden brown and cooked through (internal temperature 145°F). Drain on paper towels.
Spread tartar sauce on the bottom half of each bun. Top with lettuce, tomato slice, and a fish fillet. Cover with bun top. Serve immediately.
Tips
For extra crunch, use fresh panko and do not overcrowd the pan.
Substitute tartar sauce with remoulade or a squeeze of lemon.
Store leftover cooked fillets in the fridge and reheat in a toaster oven for crispiness.
