Ingredients
- 1 lb cod fillets (or other firm white fish)
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cold water
- 1/4 cup milk
- 1 large egg
- 4 burger buns, split and toasted
- 4 leaves lettuce
- 4 slices tomato
- 1/2 cup tartar sauce (store-bought or homemade)
- Vegetable oil for frying
Instructions
- Pat fish fillets dry and cut into 4 equal portions. Season lightly with salt and pepper.
- In a bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Add water, milk, and egg; whisk until smooth batter forms.
- Heat about 1 inch of oil in a deep skillet to 350°F (175°C).
- Dip each fish portion into batter, letting excess drip off. Carefully place into hot oil.
- Fry for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
- Toast burger buns if desired. Spread tartar sauce on bottom buns.
- Assemble burgers: bottom bun with sauce, lettuce, tomato, fried fish, then top bun.
Tips
- For extra crunch, use panko breadcrumbs instead of batter.
- Serve with lemon wedges and extra tartar sauce.
- Leftover fried fish can be reheated in an air fryer at 350°F for 3 minutes.
