Ingredients
- 1 tbsp butter
- 1 large leek, white and light green parts only, sliced
- 4 cups fish or vegetable broth
- 3 medium potatoes, peeled and diced
- 1 tsp salt
- 1/4 tsp white pepper
- 1 lb salmon fillet, skin removed, cut into 1-inch cubes
- 1 cup heavy cream
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
Instructions
- In a large pot, melt butter over medium heat. Add leek and cook until softened, about 3 minutes.
- Add broth, potatoes, salt, and white pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add salmon cubes and cook until just opaque, about 3 minutes.
- Stir in heavy cream and dill. Heat through but do not boil.
- Remove from heat, stir in lemon juice. Adjust seasoning to taste. Serve hot with rye bread.
