Ingredients
- 1 cup jasmine rice, rinsed
- 4 cups water
- 1/2 lb pork belly, sliced into bite-sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium tomato, chopped
- 1 cup kangkong (water spinach) leaves
- 1/2 cup string beans, cut into 2-inch pieces
- 1 packet (about 20g) sinigang mix (tamarind flavor)
- 2 tablespoons fish sauce
- Salt and pepper to taste
Instructions
- In a large pot, sauté garlic, onion, and tomato over medium heat until softened.
- Add pork belly and cook until lightly browned.
- Pour in water and bring to a boil. Lower heat and simmer for 15 minutes or until pork is tender.
- Stir in the rinsed rice and cook for 10 minutes, stirring occasionally to prevent sticking.
- Add sinigang mix and fish sauce; stir well.
- Add string beans and cook for 2 minutes.
- Add kangkong leaves and cook for another minute until wilted.
- Season with salt and pepper to taste. Serve hot.
Tips
- For a richer flavor, use pork broth instead of water.
- Adjust sourness by adding more or less sinigang mix.
- Serve with fried fish or grilled pork for a complete meal.
