Ingredients
4 cups pork rinds (chicharon), broken into bite-size pieces
1/2 cup fried garlic (from about 1 head garlic, thinly sliced and fried until golden)
1/4 cup fried shallots (optional, from 2 shallots, sliced and fried)
2 tablespoons brown sugar
1 tablespoon fish sauce (patis)
1/2 teaspoon chili flakes (optional)
1/4 cup chopped fresh cilantro (optional)
Instructions
In a large bowl, combine pork rinds, fried garlic, and fried shallots (if using).
In a small pan over low heat, melt brown sugar with fish sauce and chili flakes (if using) until sugar dissolves and mixture becomes syrupy, about 2 minutes. Do not burn.
Pour the hot syrup over the pork rind mixture and toss quickly to coat evenly.
Spread the mixture on a baking sheet to cool and crisp up, about 5 minutes.
Once cooled, transfer to a serving bowl and garnish with cilantro (if using). Serve immediately or store in an airtight container.

For extra crunch, use day-old pork rinds.
